Paul Basten May 14, 2009 at 9:50am If doubling the recipe - how do you 'double' 3 eggs? Paul, a large egg weighs about 1 3/4 ounces out of the shell. Mix 5 eggs; measure out 7 7/8 ounces; and make a little scrambled half-an-egg with the rest! Or do it by volume, if you prefer. PJH Reply
