OMG these are indeed wonderful. Had the perfect opportunity to make them this morning, walked into the kitchen as my husband was grimly surveying the miserable results of his attempt to make himself some pancakes. I had no idea a mix could go so wrong. It's always fun when King Arthur rides to the rescue. I did use fat free ricotta cheese with no apparent ill effects. The pancakes were light, lemony and delicious. I see some serious competition for my usual King Arthur sourdough pancakes. WooHoo. We love hearing about the weekend success stories in the kitchen.
