I have made those guaranteed perfect pancakes and that is a terrific recipe. Last time I threw in some white whole wheat flour in place of some of the white flour and it was fabulous. I even kept some overnight in the fridge and microwaved them in the morning (I made them for dinner originally--I never have time to make something like pancakes for breakfast). I think I will try the topping described here on the other pancakes.
