Don't give up on this bread. It is absolutely spectacular. Like you, I've been baking bread for over 50 years and this is the most requested bread I make. It's a wonderful gift for friends and family for the holidays or as a simple thank you. My culinary school daughter-in-law now does the same, with the addition of compound honeys or butter. Yum! As for the pan, a piece of parchment (no need to grease it) is perfect. You can let the dough take its second rise directly in the parchment in the pan. So easy. Good luck!
