This bread was a disaster for me. I've been making bread for 50 years, have made a number of no-knead breads, and have never had a failure until now. I think the problem was that the recipe did not call for greasing the casserole dish. I looked at the pictures and read the text, but nowhere was greasing the casserole mentioned. That seemed odd, but I decided to trust the recipe. As a result the bread stuck to the pan and fell apart when I took it out, even though I had released the sides. Also, even though my thermometer showed slightly more than 205 degrees, the bread was too soft in the middle. Because I couldn't get it out in one piece, I was unable to cook it for a few more minutes out of the pan as I often do with other breads. Everything else in the recipe worked well. The bread rose nicely in the second rising, but all was spoiled by what happened at the end. This was very disappointing as I'd intended this bread to be part of our Thanksgiving meal.
