PJ, sorry I didn't write sooner. I did e-mail Le Creuset about the knobs that usually comes with their pots, and they do not recommend using it for a high temperature range...so, the solution was to buy a stainless steel knob which you can find online anywhere... Just to let you know, I finally got the knob and will try it today. I am so excited to make it. Thanks again for sharing this with us. have fun with it!
