This blog was very informative. I have been an avid baker for the last 4 years and would like to think that I do a reasonably good job thus I was disappointed when my Maple Oatmeal Bread did no rise in the pan. I followed the recipe to a T but got poor rise. Lo and behold I did no have the correct pan. Thank You KA for pointing me to this blog. I learned something that will make me a better baker.
