Generations of experience in my Italian-American family has determined that the VillaWare Prego iron is the best pizzelle iron. It makes the thinnest, crispiest, and most perfect pizzelles. I don't recall anyone in my family ever flavoring them with anise. It's always vanilla or almond. When I started experimenting with my own iron I tried several flavors with various degrees of success. But my favorite flavor is eggnog. I found it in the KAF Baker's Catalog years ago and it is now the special "secret" ingredient that makes my pizzelles mine. The flavor is hard to pin down but everyone seems to like the combination of vanilla, warm spices, and... something else... that just seems synonymous with Christmas.
