Wow, so it looked beautiful before you put it in the oven and then it lost its shape? Usually this is attributed to a dough that has over risen, one that underdeveloped or the dough is too slack. It sounds like your oven may be having some temperature challenges. An oven thermometer is really helpful here! Once you have control over the oven temp, a thermometer that has a probe for testing the interior temp is the best way to determine if it is ready. The interior temp should read close to 209 degrees F. Your inclination to use foil was a good one but see where you can improve on regulating the temperature of your oven. Good luck NutMeg!
