hello, i am from India, i want to make this but some doubts which i want to clear it- first-can i use all purpose flour(as it is not available here),second- i haveOTG so on which rack of the OTG should it be baked with both the elements on or only bottom element on, third- can i bake whole dough in one loaf in 9 x 5 loaf pan? warm regards and thanks. This recipe calls for using all-purpose flour. You'll want to use a white flour with about 11.7% protein. I have not baked in an OTG before, but I would recommend baking in the center of the unit with both elements on. If the top starts to brown too fast, I would tent the brioche with foil and turn off the top element. This recipe makes two 9X5 inch loaves. Simply halve the recipe if you want just one loaf.
