I like using Mellow Blend for rolls sometimes. Would this work here? What about whole wheat pastry flour? How would Hi-Maize work with either of these flours? Yes, Cathy, Mellow Blend would be fine; cut back on the water by a few tablespoons. I wouldn't use ww pastry flour - not enough gluten. And yes, substitute Hi-maize for about 3/4 cup of the flour you use -should work just fine. Enjoy - PJH
