I've been making a pizza dough almost identical to this for about a year. I read an article in the local rag about a book written by Jeff Hertzberg and Zoe Francois entitled " Artisan Bread in Five Minutes a Day". I love the rustic bread and pizza crusts that come from this book. The master recipe is very similar to this one. I love the Hertzberg book, too - use it a LOT here. PJH
