This looks fabulous, although I'm not sure how to time it for dinner if you want the 16 hr flavor rather than the 24 hr flavor. I hope you'll share what you've learned from '5 minutes a day'. I've played around with it some and would like to try more. At some point, Sarah, I'm going to blog Jeff Hertzberg's book. Right now, I'm trying to figure out the "right" amount of water/flour for winter; winter changes that ratio, because the flour is drier. At the moment, I think it's 31 ounces flour and 26 ounces water...
