Looks great! Is there a way to make this dough lower carb? I will definitely buy the Hi-Maize natural fiber when it's back in stock. (My husband was just diagnosed with Type 1 Diabetes :( so many diet changes are in store for us). Would it be possible to substitute some oat or barley flour? This is a wonderful blog, and I love your sense of humor PJ! Margot, sorry, I don't know a way to make this lower-carb without totally changing it. You could definitely substitute a bit of lower-carb flours, but I'm not sure how much without making the dough so "flabby" it won't rise at all. Do some experimenting, see what happens, and let us know. PJH
