Hi Cheryl, it sounds like you might want to try using melted vegetable shortening to make your pan more non-stick. We like using a clean pastry brush to get the shortening into all the nooks and edges of the pan. You could also consider using a concentrated non-stick spray, like our Everbake Pan Spray. As for encouraging the edges of the brownies to rise less, try turning down the baking temperature by 25°F. A more gentle bake should help the brownies stay flat and bake through more evenly.
