Dyan, you can use an equal amount of caster sugar (we call it Baker's Special Sugar) in your favorite brownie recipe if you like. Typically this superfine sugar is reserved for making delicate desserts that need a smooth texture like mousses, custards, puddings, meringues. However, if you want to give it a go in your brownies, use the same amount as what's called for in the recipe (whether measuring by volume or by weight). Kye@KAF
