Hi Craig, when substituting natural cocoa for dutch process cocoa in a recipe calling for baking powder, use the same amount of natural cocoa, and replace the baking powder with half the amount of baking soda. In this recipe replace the 1 teaspoon of baking powder called for with 1/2 teaspoon baking soda. Barb@KAF
