I used King Arthur's Buttermilk powder. After some research to see if it was appropriate I read that the texture might change. I found the dough to be very sticky. Too sticky to use oil & to roll out so I floured my hands to create the knots & hearts. I used a multirack convection oven setting, set the timer for 10 min, then exchanged the pans, set it for another 10 min & they were done quickly because I didn't lower the temperature of 25 degrees when using convection. I had to have them done before 5:00 because we are on a time of usage with our electric company & the rates go up considerably after 5:00. I used 1/2 tsp on Fiori di Sicilia & they turned out so soft inside! Did the buttermilk powder make them more sticky? I loved them! I'd make them any day over pop overs!
