Oh, this looks seriously delicious! I will certainly make it for a special occasion. I have one question: do you leave it out on a cooling rack to firm up for those 5-6 hours, per the recipe, or do you refrigerate it, and if so, when? Remove the pie from the oven, and cool completely (at least 5 to 6 hours) before serving at room temperature. Refrigerate any leftovers.
