This looks like a wonderful dip! I have a question about roasting the peppers as I've never done this. Could you seed and core them first, then lay them on the baking tray and broil? I'm thinking you could avoid turning them that way, but maybe there is a reason it shouldn't be done that way. Hi Sue, I don't know of a culinary reason to broil whole vs. seeded, but you could certainly give it a try. I do know from having seeded roasted vs. unroasted peppers that roasted are definitely easier to seed. They are softer, and everything seems to slip right out. Enjoy! ~MaryJane
