Does changing to steam, or the 2 and 1 minute timing in boiling water, apply to egg bagels? I've made these a couple of times, using boiling water. They do tend to deflate after taking them out of the water and don't fully recover in the oven. They aren't heavy at all and they taste lovely. Yes, steaming will work just fine for egg bagels.
