I have a question about the second six bagels. They will sit at a room temperature for about half an hour more (while you are baking the first six); does this affect them? Good question, Vladimir. They rise a bit, but as you shape them and put the hole in the center, they deflate, so they're just like the first six by the time you're ready to put them in the steam. PJH
