I have made bagels three times, and could never figure out why my bagels tasted good, but were pretty flat. Now I know! I am going to try to making baby bagels with steam tomorrow - yay for being a teacher with snow days. Nice thing about bagels is you pretty much always have the ingredients on hand, huh?
