Hi there
I live in Australia and although I can’t purchase your products here I still use your recipes as a fantastic resource.

I am eager to try your pain de mie recipe but I can’t find potato starch anywhere in my usual supermarkets.

I have read that I can substitute cornflour at a 1:1 ratio for potato starch, is that correct?

I need to better understand the role of the potato starch in the recipe, do you have any further information please?
