I am new to the pain de mie method. I was given two pans as x-mas gifts. The smaller is 8.75x4.75x4.375. The larger is 12x4.25x4.25.
I would like to use the smaller recipe to make a cinnamon raisin bread as I have heard the pain de mie is well suited that. Can this recipe be used for this or do I need to seek out a more specialized recipe designed specifically for that purpose?
I am also wondering if a honey oatmeal bread recipe could work in the larger pain de mie? I am sure I will need to adjust my current recipe calculations for the larger size and am curious as to what overall volume of dough I should be shooting for in the larger pan.
