Hi Victoria, an 8"x4"x4" pullman pan is a little smaller than our Smaller Pullman Loaf Pan, but I think close enough to work in this recipe that is geared for the smaller pan. You could easily double this recipe for your two pans, and if it seems like you have a little too much dough, make a roll or two. As far as our Baker's Special Dry Milk goes, when we say that it doesn't reconstitute well that means that you can't mix in directly with water to make liquid milk, as you can with instant dry milk. Our dry milk is intended for baking, and we recommend adding it in with the flour rather than mixing it with the liquid ingredients, as it tends to clump. Our dry milk is back in stock, but you could also substitute another nonfat dry milk and use the same amount by weight. If you don't have a scale, be sure to measure your flour using this method to avoid adding too much flour to your recipe; this is especially important when doubling a recipe. If you're using instant dry milk, which is fluffier in consistency than our dry milk, substitute 1/3 cup for each 1/4 cup of our dry milk called for in the recipe.
