I am intrigued by this Pain De Mie recipe that uses dry milk and potato flour. My 2 Pullman pans are 8x4x4 are my Christmas present. I am excited to try them out.
1) Can I use this recipe and divide dough by 2 or will the recipe need to be adjusted as the quantities may not be enough for 2 loaves.
2) On the dry milk…what does it mean that the dry milk won’t reconstitute?
3) KA Stock is out of product. Can I substitute for any nonfat dry milk? Thanks.
