Question: I am using my Zo to do the lifting on this dough. I am using the dough setting (11). The cycle includes a first rise, punch down, and second rise. Can I go straight to my pullman pan without putting it into a bowl and letting it rise again? Seems like I might end over proofed.
I have made this bread 3 times now. Once with the KA mixer, once with the Zo, and now the Zo again. I have NOT been using your suggested "bowl rise" between the Machine and the Pan rise.
If you want a custard type feel to the bread, make the mistake I did on the second run. Use gram for gram Potato Starch instead of Potato Flour. I caught the error too late and decided to let it ride. Really makes an interesting texture.
I will bake this loaf with the correct starches and then see which I like better. Sometimes mistakes can lead to something interesting.
