Hi. I was recently given your 13x4 pan de mie loaf pan but asked it to be switched to the 9x4 pan because any bread recipe I have seen calls for a 9x4 pan; however, I see your recipe calls for the 13x4 pan. Since my 9x4 pan is on its way, is there any way your recipe can be adjusted to fit the 9x4 pan? I recently purchased the Classic Thermapen and bench scraper and am extremely happy with them. Also, I am devoted to King Arthur unbleached all purpose and bread flours which, happily, my local supermarket sells. I await your reply and continued success is my wish for King Arthur!
