I am new to bread baking and have not yet had wonderful success, until I baked a loaf of pain de mis! I read and re-read PJ Hamel’s blog, weighed every ingredient, and followed the recipe to the T. It came out so perfect that my confidence is boosted and I will keep baking bread. Thanks PJ (I used to live on the Cape and ate cookies you baked for an event at Titcomb’s bookstore.)
