We're glad to hear that the recipe is well-loved in your house! You're welcome to try adding an overnight rise to the recipe, we'd recommend doing this on the second rise. Once you shape the loaf, place it into the pan and let it rest at room temperature for about 20 to 30 minutes before moving it to the fridge to rise overnight. We'd recommend covering the loaf with plastic wrap rather than the pan lid though just in case the dough rises up higher than the edge of the pan, it won't get knocked back down by the lid.  The next morning the dough should be fully risen and ready to bake. Enjoy!
