Hi there. At the risk of returning you to high school math class, the answer to your dilemma is really pretty easy. The area of a 13" x 4" x 4" pan is 208 cubic inches. The 16" pan comes out to 256 cubic inches. Dividing the larger number by the smaller one gives you a ratio of 12%; the simplest thing to do is take the 9" x 13" recipe and multiply all of the ingredients by 1.12. That should give you a recipe that fits your larger pan just right. For our 13" pan de mix recipe, that means 6 ounces of milk, 8 ounces of water, 3 1/2 ounces of butter, 2 1/2 teaspoons of salt, 1 1/2 ounces each of sugar, Baker's Special Dry milk, and potato flour. Lastly, you'll need 22 1/2 ounces of flour and 2 1/4 teaspoons yeast. Good luck!
