I know this is a really old post, but I hope someone is still checking it.
My pullman pan is 16"×4"×4". I have not been able to find any recipes for it. Just for 9" & 13" pans.
Buying a smaller pan is not an option. The smaller sized pans would not suit my family at all. They can butter & wolf down a freshly baked loaf in what seems like 30 seconds flat!
Before this it has been hit or miss. Make a double recipe & fix about 1/3 or 1/4 of the dough into rolls & put the rest in the pan. It doesn't always work. Sometimes it's a heavenly loaf with heavenly rolls. Other times, it's heavenly rolls & a royal mess. It's just that not all recipes are equal.
I use scales to measure all ingredients, so I can use cups or weight. (I actually prefer weight over cup measurements).
Is there a way to reliably convert recipes into pullman size? Standard loaf recipes into my 16" pan size?
How do I convert 9" & 13" pullman recipes to fit my pullman pan, please?
