Carl, do you mean a 9" pain de mie pan? We aren't familiar with a 19" version. For the 9" pain de mie, you're generally looking for a recipe that uses 3-4 cups of flour, so this recipe would be just a little too large as written. To get the right amount of dough, you could reduce the batch size by multiplying the weight in grams of each ingredient by .75. Alternatively, you could make the dough as is, measure out just enough to fill your pain de mie pan between 1/2 - 2/3 full (you may have to experiment a bit to figure out exactly how much dough you need to fill the pan) and shape the remaining dough into rolls (baker's treat!).
