This is more of a question than it is a comment.
Since do not use shortening or other hydrogenated oils in our cooking, I made this recipe with butter, instead. Other than that, I followed the recipe exactly, even using "00" flour. I do use my Kitchen Aid pasta-roller attachment, because it's difficult for me to roll out the dough by hand.
My question is for those of you who also like to use the KA pasta rolling attachment for your crackers. What setting works best for you? I tried setting 4, which is the setting I use for KAF's Sourdough Cracker recipe. However, with this cheese cracker recipe, setting 4 produced crackers that were so thin that they went from not looking "done" to being overly browned in the blink of an eye, it seemed.
I tried setting 3, and those crackers seemed to be too thick. They didn't crisp up as well as the thinner crackers.
Frankly, both my husband and I preferred the crackers produced on setting 4. We even like the flavor of the darker crackers. However, they aren't as "pretty" as the recipe's photo, or as pretty as I'd hoped.
I didn't lower the oven temperature, because I had used butter instead of shortening and was worried the lower temperature might cause the crackers to spread out too much. But maybe that would be a good idea?
We love KAF's Sourdough Cracker recipe. I make it often. We like that it calls for KAF's White Whole Wheat Flour. It's delicious, as well as much more nutritious (we do order the organic version). And I especially love that it helps me use up my sourdough starter "discard".
I'm wondering if I any of you have added the KAF Vermont Cheese Powder to the Sourdough Cracker recipe and, if so, how much. I've also wondered whether adding a tiny bit of garlic and onion powders, some paprika for color, and a touch of ground mustard and perhaps a bit of cayenne for a bit of kick might be good. Have any of you experimented with turning the Sourdough Crackers into cheese crackers?
Your feedback and suggestions would be most welcome. We have come to love home-made crackers! It seems we eat them as almost fast as they come out of the oven, they are so delicious!
