What else could you season these with...dairy allergy and all keeps me from cheese. Garlic powder? Rosemary? Seasoned salt of some sort?
Sure, whatever you like. Without the cheese in there, you'll probably need to add a bit more flour to make the dough roll-able. We have some good cracker recipes in The Baker's Companion; see if your library has it (though I totally recommend making it a part of your baking library... it's a pretty awesome book, if I do say so myself!)
