Hi PB, since this recipe only calls for 1/4 teaspoon of baking soda, I think it would work fine to leave it out, although you will likely get a slightly different flavor and texture. We do allow you the option to bake our English Muffin Mix in a loaf pan, so you could certainly give it a try, although determining exactly how much batter to put in a loaf pan and how long to bake it might be a bit tricky.
