Hi Taylor, it sounds like your dough may have been a little overproofed (risen too high in the pan) before baking, or perhaps a  little overbaked. Dough that has risen too high in th pan can sometimes be excessively airy, which can cause the baked bread to be drier and fall apart more easily. If the bread turned out a little darker than usual, this can also contribute to a drier, more crumbly loaf.
