I just made this bread. Looks great. It's cooling now, so reading all the comments to find this question. This was my exact question. High on my KA is "10", but speed 8 seemed way too fast, and it started looking elastic way too soon, so I stopped it after 30 seconds on 8. It looked like your picture. I'll update my copy of your recipe to indicate a minute at "6" next time. Thank you!
