I made this yesterday. The only thing I changed was using coconut oil instead of vegetable oil and 1 TBS honey instead of sugar. The dough was very dry and twisted up on the hook when mixing. I added about 2-3 TBS of water and it still was very stiff. I was able to pull it off the hook and placed it in the loaf pan - it was not soft and fluid. After baking and cooling it looked nice and sliced well, but the texture was dense and has tiny bubbles, not light and airy as I wanted. What happened? I carefully aerated the flour prior to dipping and leveling it. Used the smaller size loaf pan. It tastes ok, but not airy. Any ideas?
