Hi Anne! For mini loaves, the only thing you should need to adjust is the second rise time and the baking time. You'll want to keep a close eye on the dough once you put it in the pans, only letting it rise to just slightly higher than the rim of the pan. This will probably take about 25 minutes. We'd recommend baking them for approximately 18 minutes or until they're golden brown and the internal temperature is 190°F. Happy baking!
