Hi Kristin, you always want to cover bread dough with something that will keep the moisture in. This could be an overturned bowl, this could be some grease plastic wrap (just spray it with some pan spray) if the dough is in a bowl having its first rise, you can stick a dinner plate or pan on top of the bowl to keep moisture in. What you want to avoid are things that are porous like towels, as they let moisture out and the dough can develop a skin that impedes rise.
