Do I have to use a Stand Mixer for this? Can I use a handheld mixer or even a wooden spoon? Yes to the hand mixer. Not sure about the wooden spoon. How much energy and how strong are you? If you're a good, strong beater by hand, give it a try - probably you'll need to stir for several minutes to develop the dough's gluten enough... PJH
