I baked this last night. I had a slice (actually two) this a.m. and though they were flavorful and crunchy, I didn't get that many "nooks and crannies." I'm wondering if I should've let it rise a bit more? The dough was just above the ridge of the pan. I will have to bake it again to experiment :). Regardless, it did remind me of a crunchy English muffin!
