I'll be trying these today. Was wondering, what if I heat the oil and THEN put it on the baking try... no fire fear, no cold oil.. crispy result - u think that'll work? So long as you're careful, and work very quickly. The oil will naturally cool down as you transfer it from fry pan or skillet to baking sheet, so the cakes might tend to stick a bit more. But it's definitely worth a try- PJH
