If you have a juicer, this is a very easy and fast way of finely shredding the potatoes and extracting the water. I have a Jack Lalanejuicer so i put the pieces of raw, cleaned potatoes into the feeder and collect the dry, fluffy shreds from the container that usually collects the fruit and vegetable pulp from juicing. No wringing, squeezing, or wasting paper towels necessary. The extracted starchy potato water can be used in place of plain water to make bread - the yeast loves it.
