I've never made latkes before, but I love potatoes and have been tempted to try. I love the idea of cooking them all at once, in the oven, and no splatters or pot of oil to clean up. I just might try your easy-does-it version! Go for it, Teresa - I'd never made them before, either. If I can do it.... :) PJH
