That's awesome! i love latkes, but i do NOT love frying on the stove. i didn't think they'd work in the oven (not enough oil), so i've never tried it-- but i will now! Thanks so much! Just be sure to use enough oil that there's a coating on the pan that actually moves around. Don't be stingy... it should "sheet" when you tilt the pan. PJH
