Ooohhhhhhh...........mmmmmmmmmm. I'm not Jewish, but I have to say, there are two things that are better than anything, and one of them is latkes. The other is matzo ball soup. I'm drooling just thinking about them. Latkes are truly a staple for fish fry here in Wisconsin - I grew up eating them with either applesauce or maple syrup. And we're naughty here - we fry them up. ;) Only thing that is different from my recipe (and probably makes it un-Kosher) is that we add a few crumbled Ritz (or butter) crackers to the mix. My mom bakes hers sometimes, but I say, where's the fun in that!? ;) We're celebrating Chanukah with some neighbors this year, and I'm really excited that they want to include us. :)
