Anne, it sounds like you're doing lots of things right! We might also suggest switching the rack that it's sitting on about halfway through. A change in location might alleviate any unevenness. Ultimately, you'll need to trust your eyeballs. When it looks golden-brown with darker edges, you're all set. Kat@KAF
